Here’s a step-by-step guide to cooking a Picanha, often done as a classic Brazilian-style churrasco:
1. Preparation
Your Picanha will come with a nice fat cap. This fat layer adds flavor and moisture during cooking.
Slice: Cut the Picanha into thick steaks (about 1-1.5 inches thick) against the grain.

The Sirloin

I scored the fat cap. Seasoned with salt pepper garlic. Smoked between the temperature of 230 to 255 for approximately 2 to 3 hours with Hickory wood and Apple. I smoked until internal temperature of 135° and let it rest for about 10 to 15 minutes. It melted in our mouth. I will be buying more.
First time cooking a Picanha and it was delicious. Started off hanging the steak in the WSM and ended up finishing them on a grate over the charcoal ring. Sliced them up thin and the slices were so tender.

Oh boy, we purchased our 1/4 beef a while back and finally had our picanha. Our only mistake was not having it sooner! Cooked it on the Traeger at 450 for 25 minutes, turning it every 5 minutes, and the fat cap rendered down to that perfect crispy crust while the inside stayed super juicy and tender. Wonderful taste and quality as always.

This is my new favorite cut of meat. I cooked it like a rib roast (Malcolm Reed), Covered with W sauce and Holy Cow, smoked at 275 and pulled at 125, then seared it for a nice crust. I used it for leftovers the next day and made sandwiches with a horseradish cream sauce and pickled red onions. Not kidding...this was seriously amazing!

So glad 44 Farms introduced me to the Picanha cut. Who would have thought this unusual “sirloin cap” would be one of the best steak dinners you have ever tasted. I cooked it whole after coating the entire roast with a dry rub. There are many rubs to be discovered on the internet. I’ve cooked it entirely on the grill and also seared it on the grill and then finished in a 250 degree oven. Just try it. Lots of compliments coming!
We haven't been able to cook much out of order yet but the items we have tried are fine EXCEPT the tamales. They probably should be removed from the site. We tried them multiple ways. The filling is more like roast paste and the casing was leathery and honestly inedible. I absolutely love the pepper infused salt.

I have had three pics had from 44 Farms. They have all been delicious. I bring it to room temperature, season with steak seasoning, sear on my gas grill, finish in the oven to 118F, rest. Carryover temp is 130-132F medium rare.
