If you’ve never tried bavette steak, you’re in for a treat.
Known as the “butcher’s steak,” bavette is prized for its rich beef flavor, exceptional marbling, and tender texture. Cut from the sirloin region, this versatile steak delivers the bold, beef-forward taste steak lovers crave while remaining one of the best values in premium beef.
Often compared to flank steak or outside skirt steak, bavette stands apart thanks to its superior marbling and natural tenderness. The loose grain structure allows it to absorb marinades beautifully, while its rich flavor shines with nothing more than salt, pepper, and high heat.
Whether you’re grilling for a crowd, searing in a cast iron skillet, building steak tacos, or slicing it over a salad, bavette offers steakhouse-quality flavor in a remarkably versatile cut.

Best Prepared
Bavette steak performs best when cooked hot and fast.
Bring steak to room temperature for 30 minutes.
Season generously with salt and pepper.
Grill or sear over high heat.
Cook to medium-rare (130–135°F).
Rest for 5–10 minutes.
Slice thinly against the grain.
Because bavette has a loose grain structure, proper slicing is critical for maximum tenderness.

Frequently Asked Questions About USDA Choice Bavette Steak
What is bavette steak?
Bavette steak is a flavorful, well-marbled cut from the sirloin region of the animal. Often called flap steak or butcher’s steak, it’s prized for its rich beef flavor and tender texture when sliced against the grain.
Is bavette steak the same as flank steak?
No. While they share a similar appearance, bavette steak typically has more marbling and a looser grain structure than flank steak, resulting in a richer flavor and more tender bite.
What is the best way to cook bavette steak?
Bavette steak is best cooked over high heat on a grill or cast iron skillet and served medium-rare to medium. Always slice against the grain before serving.
What temperature should bavette steak be cooked to?
For the best combination of tenderness and flavor, cook bavette steak to a final internal temperature of 130–135°F for medium-rare.
Why is bavette steak called butcher’s steak?
Bavette earned the nickname “butcher’s steak” because butchers often kept this flavorful cut for themselves rather than displaying it in the meat case.

The Sirloin
The sirloin primal sits just behind the short loin and before the round, bridging the gap between tender steak cuts and leaner working muscles. This area produces flavorful, versatile cuts that balance tenderness with a hearty beef taste.
From the sirloin come popular cuts like top sirloin steaks and sirloin roasts. These cuts are known for their robust flavor and firm texture, making them excellent choices for grilling, roasting, or slicing for steak dishes.
While slightly leaner than ribeye or strip steaks, sirloin cuts deliver outstanding beef flavor and perform well with simple seasoning and high-heat cooking. For many steak lovers, sirloin offers the perfect combination of quality, flavor, and versatility.
Wedding Bavette!
My husband and I had a camp wedding in Palo Duro Canyon State Park and we brought 24lbs of bavette out there to grill on our flat top black stone grill! My dad marinated and cooked it perfectly for THE BEST steak tacos in the world.
Everyone at the wedding loved the steak, we will be forever bavette buyers!
Thanks 44 farms, keep up the amazing work.

I’ve never had bavette steak before. It was so tender and flavorful. Cooked it over charcoal and formed a nice outer crust. It cut like butter. Will definitely buy again!!
The Bravette steak from 44 Steaks is quickly becoming my go to steak! I love the deep beef flavor and surprising tenderness. My wife and I can split one with grilled green beans, Shitake Mushroom, and onions done on the griddle. I order them a dozen at a time....
The Bavette steaks were as wonderful as the first time we purchased with you.
HOWEVER, the "dino" bones were a disappointment. The first time we purchased they WERE "dino" sized. The last order of three DID NOT qualify to be called such, and had substantially LESS meat than the first order from you. My husband has forty years experience in executive slots as a chef, and now parttime, is a meatcutter at a major grocery chain and can get the same angus product for less than half the price. The quality of your meats is wonderful, but you are quite expensive and so we expect the "extra" mile in a product called "dino bones". We most likely will NOT order those again from you. Thank you.
44 steaks is the best I’ve been dealing with them for over two years and they have the best steaks out of any of these online stake watering places. Their choice and their prime steaks are some of the best I’ve ever eaten. Thank you very much 44 steaks and I will continue to do service with you guys.
Always a tender and flavorful cut of meat from 44 Farms. I order 8 of them at a time so I always have some in the freezer. It is a versatile cut, good for plain grilling, fajitas, etc. Love em!!
Excellent stuff all 'round. Had a small issue with an order that your staff took care of promptly and generously. Appreciate your products and your customer service.
44 Farms is absolutely a first class organization. I’ve bought several beef orders in all of them are exactly as advertised great flavor delivered on time and best of all all my neighbors love it thank you 44
Wonderful steak. My mom used to cook these steaks when I was growing up in Europe and I've always loved the beefiness and tenderness of the cut. I'm glad I can finally get it in the USA.
Only had the NY strips so far. Seared on a Blackstone griddle with MeatChurch Blanco and a top layer of Goldies Brisket rub....best NY strip I've ever had. I should do more.
